The Tortilla | La Tortilla


If you are looking for a recipe for a traditional Spanish dish here it is! Tortilla, perfect in its simplicity, great for any time of day or year. I've done it a few times every time it came out great! I got this recipe from a friend who lives in Spain, which makes it even more authentic ;)


Ingredients:
for the pan with a diameter of about 20 cm
  • 600 g potatoes
  • 2 large onions
  • 3/4 liter oil
  • 2 large or 3 small eggs
  • 2 tablespoons chopped fresh parsley
  • salt and pepper to taste
Preparation:

Peel potatoes and cut into slices approximately 2 mm thick (best option would be using a cutter, then all the slices are the same thickness). Place the potatoes in a pan (it should almost fill it) and pour all the oil so that it covers the potatoes. In this way, the potatoes need to "sweat" on a very low heat for 20-30 minutes. It is important not to fry potatoes, it's about cooking potatoes in it - fat is just supposed to bubble gently. If they are soft on the inside means that they are ready. Place it into a sieve and drain the fat. Leave in a sieve to cool.

Cut onions cut into the feathers. Put it in a slightly hot pan with 3-4 tablespoons of oil and fry over very low heat for about 30 minutes. Onions should be soft and brown. If in the meantime you will notice it's burning add more oil. Don't forget about the mixing!

In a large bowl and gently beat the eggs. Add salt, pepper, chopped parsley and potatoes. Mix the ingredients thoroughly but gently .

Not it's time for frying tortillas. We will need two pans to do that. One with the diameter of about 20 cm, the second needs to be wider than that. Start with smaller skillet. Put it on low heat, add 2-3 tablespoons of oil (distribute fat exactly to the walls to prevent tortilla from sticking). Place potatoe mass in the skillet. Using a wooden spoon level the surface of tortillas. Fry on low heat for 8-10 minutes. Meanwhile, prepare the second frying pan by heating up small amount of fat. At that point shake the first pan, if you feel that tortilla os moving away from the sides and is compact that means it's time to flip it. The moment of horror, yes it always scares us too! The easiest way to do it is to grab the two pans together and quickly flip the tortillas from a small er skillet to the bigger one. Keep frying tortillas for 2-3 minutes and it's done !

Serve it to hot or cold and enjoy one of my favorite flavors of Spain!

Jeżeli szukacie przepisu na tradycyjne hiszpańskie danie, to świetnie trafiliście! Tortilla, idealna w swojej prostocie, świetna na każdą porę dnia i roku. Robiłam ją już kilka razy za każdym razem wychodzi świetna! Przepis dostałam od przyjaciela mieszkającego w Hiszpanii, co czyni ją jeszcze bardziej autentyczną ;) 

Składniki:
na patelnię o średnicy około 20 cm 
  • 600 g ziemniaków
  • 2 duże cebule 
  • 3/4 l oleju 
  • 2 duże albo 3 małe jajka 
  • 2 łyżki posiekanej świeżej pietruszki 
  • sól i pieprz do smaku
Przygotowanie:


Ziemniaki obierz i pokrój w plasterki o grubości około 2 mm (najlepiej będzie jak użyjesz krajalnicy, wtedy wszystkie plasterki będą tej samej grubości). Umieść ziemniaki na patelni (powinny ją prawie wypełniać) i zalej całość olejem tak by zakrywał ziemniaki. W ten sposób ziemniaki muszą się "pocić" na bardzo małym ogniu przez 20-30 minut. Ważne jest by nie smażyć ziemniaków, tłuszcz ma tylko delikatnie bulgotać, chodzi o gotowanie w nim ziemniaków. Jeżeli są miękkie w środku znaczy, że są gotowe. Gotowe plasterki przekładamy na sito i porządnie odsączamy z tłuszczu. Pozostawiamy na sitku do przestygnięcia.

Cebule kroimy w piórka. Umieszczamy ją na lekko rozgrzanej patelni z 3-4 łyżkami oleju i smażymy (a raczej karmelizujemy) na bardzo małym ogniu przez około 30 minut. Cebula ma być miękka i brązowa. Jeżeli w międzyczasie będzie wam się przypalać podlejcie ją tłuszczem. Nie zapominajcie o mieszaniu!

Do dużej miski wbij jajka i lekko je roztrzep. Dodaj do nich sól, pieprz, drobno posiekaną pietruszką oraz przestudzone warzywa. Dokładnie ale delikatnie wymieszaj składniki. 

Przechodzimy do smażenia tortilli. Będziemy do tego potrzebować 2 patelni. Jedna o średnicy około 20 cm, druga większa, średnica nie ma tu już znaczenia. Zaczynamy od małej patelni. Stawiamy ją na niewielkim ogniu, podlewamy 2-3 łyżkami oleju (dokładnie rozprowadźcie tłuszcz po ściankach by tortilla nie przywarła). Na rozgrzany tłuszcz przekładamy masę ziemniaczaną. Za pomocą drewnianej łyżki wyrównujemy powierzchnię tortilli. Smażymy na małym ogniu przez 8-10 minut. W międzyczasie przygotowujemy drugą patelnię, rozgrzewamy ją z niewielką ilością tłuszczu. Tortilla powinna być już mocno ścięta, potrząśnijcie patelnią jeżeli czujecie że odchodzi od boków i jest zwarta to oznacza że czas ją przerzucić. Nadchodzi moment grozy, tak mnie też to zawsze przeraża! Najłatwiej jest złapać obie patelnie i szybkim zdecydowanym ruchem przerzucić tortille z małej patelni na dużą. Jak to już zrobicie to jest z górki. Dosmażcie tortille przez 2-3 minuty i gotowe!
